Hogget

People often ask 'what is hogget ?'. Our definition is overwintered lamb between about 12 and 18 months old. It is the real conoisseur's choice of sheep meats; rich in flavour and with a firm texture. This is a meat that reflects it's upbringing. Our flocks of North Country Cheviots really mop up the subleties of our ancient pastures and heathers to give you one of the highest quality meats available. There's not much of it around - too much trouble to keep, but we reckon it's well worth it. Hung to perfection, it's usually available from us most of the year round.
