Wild Venison
Much meat is offered as venison. There is, however, a huge difference of eating quality in, say, an early season red hind or a summer roe buck. You need to know when each breed of deer is at its best to eat. We select only venison that will make excellent eating from Highland estates that handle deer in an efficient and compassionate manner. We'll always tell you the type of beast we have on offer as this needs consideration when selecting a cut of venison. That said, it's child's play to cook, essentially organic and never fails to please. Customer's tell us that our venison is some of the best they've ever eaten, so we must be getting something right !.
